I often get the question, how long will eggs last. According to Health Canada, their best before date is 3-4 weeks. And that is, definitely, the timeframe I would recommend you consume your eggs by. But I was curious how long a washed egg in a carton in my fridge would still be good for. I had figured they would last and had originally planned to crack some eggs open at 6 months old, but life happened and it took me another 6 months to finally get to it. So at 12 months to the day from when I originally washed and packaged these eggs I cracked them open. Outside to be safe, but then quickly found out that they still look and smell fine. Mind you the whites are no longer thick and fresh looking and the yolks are getting dry (as evidenced by getting a little stuck to the inner membrane of the egg and being quite thick). I would definitely choose fresher eggs over these but if I was pressed for lack of eggs/food, I wouldn't hesitate to cook and eat these. Please use your own best judgment and caution on how old of an egg you eat but my bet is a clean, well handled egg will keep a lot longer then you would expect.
