Tuesday's Tip: making broth cubes

We make a lot of bone broth in this house, mostly from chicken backs but also beef bones. I like to make large batches and freeze it to have on hand. In order to save freezer space I reduce my broth down to 1/16th of the original volume by simmering on the stove (wood stoves work particularly well for this). Once it is reduced I usually pour it into an ice cube mold with creates little cubes that equal one cup of broth when reconstituted. Perfect for cooking rice in, making soups, or adding to sauces!
